After 2 years of being affected by the Covid-19 pandemic, this year’s moon cake market has become somewhat vibrant again. Besides traditional products, customers also have many other options such as handmade moon cakes, premium moon cakes, or even more unique: art moon cakes.

Le Hang (born in 1991) – the owner of a moon cake brand with 3D floating flower art – has 5 years of seniority in this field. In 2023, she started to practice decorating moon cakes after joining groups specializing in baking on Facebook. This passion has since turned into work.

“At first, it was just my personal preference. With the support of family and friends, I thought of starting a mooncake art business. I want everyone to have beautiful 3D mooncakes to enjoy. take it away, give it away,” Hang shared.

Ms. Le Hang – who started her business from the passion of selling 3D floating flower art moon cakes

For the first time producing artistic mooncakes, and having never had any business experience, Ms. Hang faced many difficulties. Her first batches of cakes looked rather clumsy. It is not easy to produce large quantities of cakes in a short time.

“Fortunately, I also learned how to make basic cakes, and worked hard to tinker with the art of mooncakes online, so it wasn’t that bad ,” said the 9X owner.

According to Ms. Hang, making 3D art cakes is 5-7 times more difficult than traditional cakes. The especially important stages such as color matching, molding textures, decoration,… all have to be done manually. Not to mention, the cake uses natural vegetable powder to color, so it has to be baked many times at low temperature to keep the delicious taste.

“There are already a lot of traditional bakeries on the market. Therefore, I want to bring a new line of cakes for people to buy to eat or give as gifts,” said Ms. Hang. “Artistic mooncakes are colorful, suitable for the festive atmosphere, so everyone loves them” .

After more than 2 years of selling online, the 9X owner finally reached her dream of opening a real store. According to Ms. Hang, her greatest success is creating a product that is loved and accepted by everyone, as well as creating more jobs for students.

The sales period is from mid-June to the end of the Mid-Autumn Festival, but Ms. Hang had to prepare materials, facilities and labor from 4 months before. There are days, she and the staff have to stay up from 7 a.m. the day before until 4 a.m. the next morning to keep up with large orders.

At peak times, Ms. Hang’s bakery can produce up to 1,000 pieces/day, serving both retail and corporate customers. Cakes also have familiar fillings such as mixed, red beans, lotus seeds, … or premium fillings such as cordyceps,… The price of each product ranges from 80,000-100,000 VND, slightly higher than traditional mooncakes on the market.

Talking about the competition, the 9X owner is quite confident in her product.

“Due to great customer demand, many places also flock to make art moon cakes. However, my brand pays great attention to investment in product form and quality, so customers still trust me. and non-stop support” , Ms. Hang said.

In the not-too-distant future, Hang wishes to bring her “brainchild” to other provinces across the country.

“I really want to expand the brand, but this depends on the human factor. Making moon cakes art requires workers with technique, aesthetic eye and perseverance ,” she said.

“Maybe in a few years, when I train more hard-working employees, I will expand to other markets, such as Ho Chi Minh City.”

Many diners visit the shop, in addition to liking the soft and fragrant eggs, they are also impressed with the accompanying salt and pepper dish. The owner shared that the duck ball has a special flavor because of the salt and pepper, following the recipe to ensure that it does not touch the goods. From pure lump salt, with Dak Lak’s skull pepper, Ms. Van grinds it finely and smoothly. This way, the salt and pepper dish is not salty and has a strong aroma of skull pepper.

Hunting Mantis Shrimp At The Beginning Of The Year, Fishermen Make Millions Every Day

On the afternoon of the 4th of the Lunar New Year (January 25), large and small boats carrying shrimp, crabs, fish, … docked at Giao Hai commune (Giao Thuy district) to catch up with the afternoon market.

Some fishermen said that in previous years they “swimmed into the sea” from the 2nd day of Tet, but this year the sea was rough, so it was not until the 4th of Tet that they started going to sea to pray for good luck.

After 10 hours floating at sea, Mr. Tran Van Duan’s small boat (residing in Giao Hai commune, Giao Thuy district) docked with nearly 10kg of crabs, 3kg of mantis shrimp and about 5kg of shrimp. On the first day of the year, few boats went out to sea, but the purchasing power was great, so as soon as Mr. Duan brought shrimp and crabs to the shore, there were 5-6 small traders waiting to pick up the goods.

Due to the small number of goods, some small businesses have to compete for a share. Ms. Pham Thi Mai (small trader at Hong Thuan market, Giao Thuy district) said that on Tet, people’s demand for seafood increased, so the price also nearly doubled. “The price is high but there are no goods to sell because this year the fishermen went to the sea late, every year on the 2nd of Tet there are many boats going out to sea, but this year on the 4th, there are only a few boats to go to the sea”, Ms. Mai To share.

The big boat of Ms. Tran Thi Luyen and her husband just landed, when dozens of small traders gathered around to choose mantis shrimp, crabs, tiger shrimp, …

Ms. Luyen said that in these days, fishermen go to the sea mainly to hunt mantis shrimp, which are easy to catch and have a high price.

Ms. Luyen is busy recording the amount of seafood sold to small traders. The female ship owner said that the family’s large boat if catching from 1 am to 2 pm the next day (1 work) costs about 7 million; If you go fishing for 3 days before landing, the cost will be 20 million VND.

Fishermen are happy after going out to sea on New Year’s Day to earn millions. The trip to the sea at the beginning of the year of the Rabbit, except for the expenses of Ms. Luyen and her husband, still has a profit of about 5 million VND.

“Mantis shrimp is a seafood that is loved by many people and is easy to sell. Today on New Year’s Day, the price is higher than before, so minus the cost of my house, I also earn more than 2 million,” said Do Thi Hoa (Mr. Tran’s wife). Van Duan) shared.

Mantis shrimp and crabs are bought by small traders right from the edge of the wave. The rest of sea shrimp and small fish are sold by boat owners to people at the foot of the dike.

Two Types Of Delicious And Exotic Molded Cakes Of Southerners

Cakes are simple, easy to eat and easy to digest, so it soon became a familiar dish of every home. Depending on the way of eating of each locality, there are many different types of cakes. Particularly in the South, there are two outstanding types of cake: sweet and savory. Sweet and savory cakes are both treasured gifts from childhood. I remember when I was a child sitting on the porch watching my mother come home from the market, my stomach rumbling and craving for a simple cake that wasn’t worth a lot of money, that’s really an unforgettable memory.

Sweet cake

Sweet cake, also known as marble cake, is a delicious and beautiful dish that makes many diners excited. The molded cake is chewy but soft, sweet and fatty, white, blue, and white like marble, making the piece of cake in the mouth even more delicious. The way to make sweet cake is quite simple. Just need to mix tapioca flour with coconut milk and pandan leaf juice, then start steaming. The most important step is to mix the powder, it must be skillful so that the white powder and color powder do not mix together, but form a marble-like pattern that is very typical of this dish.

When eating sweet cakes, cut them into small squares, drizzle over cooked coconut milk with sugar and ginger, and sprinkle some roasted white sesame seeds, simple but delicious. The piece of molded cake is as beautiful as a piece of marble, chewy and chewy, mixed with the smell of pandan leaves, fragrant roasted sesame, greasy coconut milk and a little ginger to warm the stomach, warm the heart of a “hungry” child with a gift from his hometown. a childhood full of nostalgia.

The sweet cake is both delicious and eye-catching. (Image source: tammy_my83)

Salty cake

Salty cake in the South is simply and closely called salty cake. To get a plate of delicious salty molded cake is extremely difficult. From the stage of mixing the dough is extremely complicated, the ratio of rice flour, tapioca flour, coconut milk must be very meticulous, the cake when finished is fat, soft enough and not easily crushed. The stage of casting cakes is also catching them up and steaming them like sweet cakes. Particularly, salty cake has more cake filling and fish sauce to serve. The filling is made from cassava tubers (called bean tubers in the North) which are diced, stir-fried with meat and dried shrimp.

Salty cake should be eaten with a little coaxing rack that has been boiled through boiling water, chili garlic fish sauce and a little sour food so as not to get bored. The cake must be left to cool to eat well because then the dough is more flexible, smooth, greasy and melts in the mouth. The piece of cake is molded white, greasy with coconut milk flavor combined with fragrant shrimp and meat filling, with sweet and salty garlic chili fish sauce that makes anyone who eats it once, they will flutter forever.

These two types of cakes are not simply delicious and simple dishes, but soon become sweet memories of childhood. Don’t miss it if you haven’t tried it, maybe you’ll fall in love with this “memorabilia” again!
